Matthew Thomson of Fifteen Cornwall says drawing on your team’s knowledge can drive up productivity

Matthew Thomson is chief executive of Fifteen Cornwall, Jamie Oliver’s award-winning restaurant and social enterprise at Watergate Bay. All its profits go to a charity, the Cornwall Food Foundation.

Thomson believes it’s vitally important to draw on your employees’ expertise – especially what they know about your customers, and what they know about how the business works – to increase your business’ productivity.

He told Be the Business about how Fifteen Cornwall trained its waiting staff as sommeliers, so they could give better advice on wine to customers. This generated more revenue for the business and improved their customers’ experience, while increasing the waiters’ wages and the company’s profits.
